DESCRIPTION
Botanical nomenclature.- Capsicum annum L. (Fam. Solanaceae).
Preparation.- Spanish ground Paprika is the red ripe fruit of Capsicum annum dried and milled.
Appearance and visual aspect.- Fine orange to dark red powder (different tonalities), free from any artificial coloring material and with different ranges of grain size, depending on customer´s request.
Organoleptic Properties.- Characteristic odor and flavor of Paprika.

a) Food
i)     Directly as spice or in spice blends.

EX – ROSEMARY. NATURAL ANTIOXIDANT

BORDANTIX® is a natural extract from Rosemary (Rosmarinus officinalis L.) produced in EVESA. It is used to avoid rancidity in oils and fats in Food, Feeding and Cosmetic industries. In certain concentrations does not need to be declared as an E number and can be included in products with clean label. It is the natural alternative to artificial antioxidants.

TYPES AND PROPERTIES

a) BORDANTIX C.- Decoloured and deodourized
Rosemary extract from which nearly all the chlorophyll and all of the characteristic Rosemary odour and flavour has been removed. The flavor use to be imperceptible at the usual dosage levels. The active compounds are Carnosic Acid and the metabolites of its degradation (Carnosic Acid Cascade) like Carnosol, Rosmaridiquinone, Rosmanol, etc.

a.1) BORDANTIX C. POWDER form.
Description
Preparation.- Obtained by solvent extraction of rosemary leaves with the subsequent removal of the solvent, separation of phases, drying and addition of a carrier if needed or requested by the customer.
Appearance.- Yellow to very light greenish powder.
Organoleptic Properties.- Very light characteristic odour of rosemary.

Solubility.- Dispersible in oil and insoluble in water.

Active compound range.- From 1% to 30% of Carnosic Acid.

a.2) BORDANTIX C. LIQUID form.
Description
Preparation.- Obtained by solvent extraction of rosemary leaves with the subsequent removal of the solvent, subjected to a deodourization and decolourization process and addition of a carrier if needed or requested by the customer.
Appearance.- Yellow to light greenish transparent liquid.
Organoleptic Properties.- Very light characteristic odour of rosemary.

Solubility.- Oil soluble and water soluble.

Active compound range.-

  • Oil Soluble.- From 1% to 15% of Carnosic Acid.
  • Water Soluble.- From 1% to 6% of Carnosic Acid)

b) BORDANTIX A.- Standard colour and flavour

Rosemary extract not subjected to any decolour or deodourization process. The active compounds are Carnosic Acid and the metabolites of its degradation like Carnosol, Rosmaridiquinone, Rosmanol, etc.

FLAVOUR ENHANCER – Sweet & savoury tastes

NEOHESPERIDIN DIHYDROCHALCONE (NHDC) is a no calories flavour enhancer. NHDC is approximately 1500-1800 times sweeter than sucrose (common sugar) at threshold limit concentration. A very important characteristic of NHDC is the synergistic sweetening effect it has when combined with other sweeteners.

DESCRIPTION

Origin and Preparation.- NHDC is obtained by hydrogenation of Neohesperidin, present in the peel of the citrus. Appearance.- White and crystalline powder Organoleptic Properties.- Odourless and very intense sweet flavour.

– Desserts and related products.- Water based flavoured desserts, milk and derivatives, containing fruits, egg, cereals, fat.

– Confectionery.- Chocolate based products, dry fruits, spreads, marmalade, jams, jelly, yoghourt, sweets, chewing-gum, cider, ice-cream, fruit preserves, bakery, and food replacing diet products.

– Savoury products.- Pate, sauces and condiments, seasonings, mayonnaise, soups, fish and meat preserves. At very low levels (1-5 ppm) it enhances the food flavour.

b) Cosmetics.- Tooth-paste, mouth-wash.

c) Pharmaceutical.- NH-DC attenuates the bitter taste in drug formulations.

d) Feedstuffs.- The addition of NH-DC improves the feed taste and therefore the daily feed intake is higher and the feeding time is reduced.

CAPSICUM OLEORESINS

Other type of product that EVESA can provide as food, feed or pharmaceutical ingredients are different CAPSICUM OLEORESINs (ORCs). If PAPRIKA OLEORESINS (ORPs) provide red-orange color to the final product, ORCs give hotness as a flavor, depending on the content of capsaicinoids of the ORC used and the dosage.
