Paprika Powder is one of the characteristic products in EVESA business is PAPRIKA POWDER, a worldwide famous spice full of flavor and taste of paprika.

DESCRIPTION
Botanical nomenclature.- Capsicum annum L. (Fam. Solanaceae).
Preparation.- Spanish ground Paprika is the red ripe fruit of Capsicum annum dried and milled.
Appearance and visual aspect.- Fine orange to dark red powder (different tonalities), free from any artificial coloring material and with different ranges of grain size, depending on customer´s request.
Organoleptic Properties.- Characteristic odor and flavor of Paprika.

APPLICATIONS
a) Food
i)     Directly as spice or in spice blends.
ii)    Meat preparations (Sausages, chorizos, salamis and similar, baked goods, etc.)
iii)   Fish preparations (canned and spiced seafood and similar products, etc.)
iv)   Condiment, gravies, dressings, marinades and sauces (ketchup, spiced mayonnaise, BBQ, harissa, etc.).
v)    Breadcrumbs, coats in batter and savoury bakery and snacks.

b) Fishing
For carp fishing (boilies).

PHYSICAL AND CHEMICAL PROPERTIES*

a) COLOR RANGE.- From 20 up to 200 AU (Method ASTA 20.1).

b) STEAM TREATED (ST) OR NON STEAM TREATED (NST).- EVESA supply ST ( <100.000 cfu) or NST product. Different values for microbiological parameters achievable, upon customer´s requests.

c) SWEET, HOT AND/OR SMOKED.- Sweet Product < 450 Shu. Hot product ≤ 30.000 Shu.

d) LIGHT & HEAT STABLE.- Products with different ranges of stability obtained by blending it with natural antioxidants mixes developed upon customer´s request.
